Can I get my cams profiled to S1 speck and get away with pistons to valve clearance.and is there any tolerance for skimming the head.??

They're standard Alpino I don't think a high compression pistons were made for the 350.

There is also generally the possibility of skimming pistons. When adjusting/modifying valve timing, piston to valve clearance is often a limiting factor too. Virtually every motor I assemble now I check piston to valve and squish clearances because there are no guaranteed spec parts or engines.
