Montjuic valve clearences.

I'm just at the point of re-shimming my valves on a 500 montjuic engine but need now to order the correct shim sizes.
But this is where confusion begins, contrary to the workshop manual, I believe that I should be aiming for .25mm on inlet and exhaust valves with the cylinder head torqued up, Which is great, have measured and worked out the sizes I need, despite the digital calipers giving a slightly different reading everytime.
But then I read the clearances will reduce once the cam chain is joined.
So what clearance should I be aiming for with new cams and end bushes? .25 .30 .35 there has to be a start point. Or should I buy every shim in the country?

Pfff, thought that is probably the answer.
Trying to reduce how oftern I have to torque up this cylinder head that seems to be manufactured from a hard type of cheese.
