Has anybody tried to swap the alternator with a dynamo/motor?

Why do you want to do that? First, if you do not have the starter motor or the gears/freewheel, well could be a much cheaper solution. But also can save maybe 3 or 4 Kg?
I am sure most of you know that it is a common mod on some old bikes.
I personally did this mod on a couple of Motoguzzi Nuovo Falcone 500, the Army version that wasn't fitted with an electric starter. Was a cheap mod especially when the 3wheeler Piaggio Ape Diesel starter motor was an easy find in almost all the scrapyard.

 
Starter/generators tend to be used for turbines and small capacity piston engines.
Since they lack gearing they have little starting power.
I think you'd struggle to get one that would turn a 750 engine over.

Hi. Well as I said, the starter generators I was referring to, are used on 400cc diesel single cylinder engines and on Guzzi single 500cc bike.
I guess no one tried to do that.
