Triple wheels will not fit in the 500 chassis without serious mods. Been there, done it... twice, never again. The only easy bit is bolting on the discs.
Triple hubs are wider so you also need to change the swing arm.
As for weight, my unsophisticated attempt at weighing are as follows:
Thick web bare 500 front wheel approx 4.8kg
Thick web rear wheel and disc approx 7kg (disc lockwired on)
RGS rear wheel without disc approx 5.2kg
RGS rear wheel with disc approx 7kg
Therefore I deduce that there is insufficient difference in the weight to make that a reason to swap wheels.
Bob Dixon put a set of thin web wheels (original wheels from my 76 Jota) on his 500 Barcelona replica. He said there was a bit of machining involved to make them fit.
