Nice work. It’ll take longer to cook under those LED lights than what you might be used toSadly, my rust riddled BBQ nearly fell to bits. It’s probably being turned into an EV in China.
After a couple of months without one and listening to my vegan wife complaining about meat smells in the house
I bit the bullet… enter Ziggy. I have a leg of lamb and Pork belly to cook up for Xmas lunch. Trial by fire, so to speak.
Speaking of pork belly, I woke up one night with a brilliant thought.
The big fat fuck pork belly I purchased is in a vacuum bag.
I’ll cut the skin face of the bag off, then use my trusty skin pricker (I call it; The Fucken Prick) salt and ground garlic it and put it into the refrigerator, skin side up, for a couple of days.
That should keep the meaty bit moist, while drying out the skin side. The result should be crispy and tender, ready for a Merry Fucken Christmas

My merry fucken christmas is a day early again this year, we’re travelling on the 25th ready to watch the Cemetery Circuit on boxing day![]()

Enjoy the bike racingBusy Boxing Day, the Sydney Hobart yacht race, the Boxing Day Test Cricket and NZ bike races. Guess my preference is if I could watch one.
