Barbecue thread (all welcome)

The most impressive BBQ i've eaten at was a chap we know who buys a whole beef fillet he marinades it overnight in his favourite concoction them puts the fillet complete on the barbque (Initally wrapped in Foil)But after a while finishes it off over the coals after removing the foil So you have well done at the thin end and rarer as you move towards the fatter part of the fillet. Absolute YUM Not cheap! and not for the faint hearted. Other meat substitues should IMO be ignored.

Well I had a crew around Satdee night, including my son's out laws and chucked a few slabs of Wagyu on the Barby.
Wasn't cheap but didn't get any complaints;)
(No pics, so perhaps it didn't happen)

Had a brisket last weekend. A seasoned 16 lb slab was vacuum bagged and cooked in a borrowed sous vide for 36 hours (!) at 155*F. I pulled it out of the tank, drained and saved the fluid, dabbed the surface dry and re-seasoned as needed. Into a smoker at 225*F for about 3 hours to form a crust. Schmeered the surface with wagyu tallow, wrapped the whole thing in butcher paper and popped it back into the smoker for about 2 hours at 170*F. Unwrap and slice. It was great! Invited a bunch of people over and they demolished it.

I had to look up sous vide, perhaps an ultrasonic cleaner could be pressed into service for that task?

bazzee

Got to love the effort and the results 😎

Tonight’s effort made from what ever is in the fridge is dinner. Bbq tuna, bbq carrots, lime steamed beans , roasted new potato and bbq courgette. Nothing else but lime juice , olive oil , maldon salt and cracked pepper. Top tip , bbq lime or lemon to squeeze over everything , it gets you juice x 10 in volume.

Bottle wil be empty when you are there so byo 😜
You know what my dislexia kicked in reading this, I thought you were writing with a brogue accent , saying “the bottle will be empty when you get there, so boyo” I had to read it a few times before it clicked. Haven’t heard of BYO for a long time

Mmmm, nicely done.

Courgette, or cucumber, is yummy if you coat it with sesame oil, and a sprinkle of sesame seeds which roast while cooking.

The last two days, I’ve been wearing out the bbq and hot plates. Cooking up meals for the freezer. One of the downsides to having a vegan wife is most cooking of meat products has to happen outside

Corned beef and potatoes, beef fritters, beef casserole with rice, garlic and ginger roast chicken, Thai pork Laksa, Spam, onion and mushroom toastiest and 9 x omelettes.

You inspired us today, I made beef casserole. Haven’t made it for ages, de glaze the pan with balsamic vinegar gives it an extra zing ! Nice work Chriso
