Tell you the truth homemade wine is probably the best: Especially Northern Ontario Goose Berry Wine (Elderberry Wine) - Tastes great, extremely clear, Heavy Body and Potent. It's not hard to make your own wine out of any Berry or Fruit - Even Potatoes, Yams... etc !
Use a 10 Gal Food Container (Crock), distilled Water and Yest, Berry's of Choice and ferment for 2 month's. Extract the pulp and add some more yest and ferment another month or 2 until it stops fermenting - Then you rack 3 or 4 times before you bottle. Takes about 4 to 5 months for a GREAT batch before you bottle - You can make several batches at intervals and it's very cheap. You can freeze the Berries and use at any time. Actually frozen thawed berries are better then fresh berries ;o)
STD Wine Recipe:
22 liters of distilled water = 6 US gals or say 5 Imperial Gallons.
12 pounds of Berries and 30 lbs of sugar per 22 liters of distilled water and 6 TPS of Brewers yeast.
